Baked Sweet Potato Bar

Ingredients:

• 1 sweet potato per person
• your favorite toppings: scallions, avocado, coconut oil, cooked black beans, shredded chicken, cilantro, nutritional yeast

Directions:

Wrap one sweet potato per person in foil and bake at 350 degrees F until soft. For quicker cooking, I prick holes in the potato before I wrap it. Serve with a variety of toppings, such as scallions, avocado, coconut oil, cooked black beans, shredded chicken, cilantro, nutritional yeast.
