• Sturdy, but pliable lettuce leaves, such as butter lettuce or large leaves of little gems
• 8 cloves garlic, minced
• 1-inch piece of ginger, minced or grated
• 1 red onion, chopped
• 3 T coconut oil
• juice of 1 lime
• 1 cup shredded carrot
• 1/2 cup shredded beet
• 1 cup shredded cabbage
• thinly sliced snap peas
• minced chicken
• 1 cup cilantro leaves
• 3 T toasted sesame seeds
Saute garlic, ginger and onion in oil.
For vegetable version: Toss the mixture with carrots and cabbage and sprinkle on lime.
For meat filling: Add the minced chicken to the garlic, ginger and onion mixture and saute until browned.
Spoon some of the mixture onto lettuce, lay other vegetables on top, sprinkle with lime and sesame seeds and roll or leave open as cups. Garnish with avocado and cilantro. Serve with one of the dressings if desired. These are a favorite with kids!
