Roasted Brussels Sprouts with Tangerine Zest

Ingredients:

• 1 lb Brussels sprouts, trimmed and cut in half
• zest of one tangerine or orange
• 1 red onion, finely diced
• 3 T olive or coconut oil
• freshly ground black pepper

Directions:

Preheat oven to 400 degrees F. Heat baking pan in oven while tossing all ingredients together in a bowl. Spread on oiled baking pan (or line it with a Silpat™ or parchment paper; maybe a little less crispy, but much easier cleanup!)
